Think of an interval like a soup and the unisons like the ingredients. If the ingredients are sour, the soup will be sour.
It's also true that the unisons might not be that sour but the intervals will sound horrible.
As piano tuners, we listen to the beat rates of intervals and make judgments based on these beat rates.
If the unisons are not pure, the beat rates are all over the place, making it impossible to determine the actual beat rate, and impossible to make an accurate judgment on the correct pitch.
