The traditional method of changing pitch is to listen to a single string. Often technicians will just guess - moving the pitch back and forth until it sounds right.
These methods are not very good because they are not precise - you cannot get good feedback on when the pitch actually changes.
This results in lost time, searching for the correct pitch and guessing when it has changed.
